Marinated cucumbers & tomatoes
3 medium cucumbers, peeled and sliced 1/4 inch thick
1 medium onion, sliced and separated into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
1/4 cup sugar
1 cup water
2 teaspoons salt
1 teaspoon fresh coarse ground black pepper
1/4 cup oil

Quick Rataouille
2 tbsp olive oil
2 onions, chopped
2 zucchini, cut into 1-inch chunks
1 red pepper, chopped
1 medium eggplant, cut into 1-inch chunks
2 cloves garlic, minced
2 tbsp fresh oregano (or 1tsp dried)
1 can (29 oz) stewed tomatoes
1 can (29 oz) chickpeas< drained & rinsed

Cucumber Noodles With Tzatziki
4 large cucumbers
1 cup minced parsley
1 cup raw cashews
1 cup raw tahini
3 cloves garlic
1 teaspoon pink Himalayan salt
1 tablespoon juice of lemons or limes
1 ⁄ 2 cup water
