Cucumber Noodles With Tzatziki.

4 large cucumbers
1 cup minced parsley
1 cup raw cashews
1 cup Raw tahini
3 cloves of garlic
1 teaspoon pink Himalayan salt
1 tablespoon juice of lemons or limes
1 ⁄ 2 cup water

Ingredients

With a spiralizer or mandolin, turn your cucumbers into noodles. You can leave the skin on, but you can also peel them if you prefer. Set aside.

In a high-speed blender, blend all ingredients for the sauce. Add more water if necessary. The less water you use, the creamier it will be.

Mix the sauce and minced parsley into your noodles with mixing aids or your hands. The more saturated the noodles, the better they will taste!

Transfer the noodle mix to a plate and top with more minced parsley. YUM!
